These Honey Lime Chicken Skewers are a hit in my household. My husband, a big fan of anything grilled, was simply floored by this dish. The kids too loved the sweet and tangy combination. We made these for a backyard barbecue party, and since then, they’ve become a staple in our grill nights.

Tangy Honey Lime Chicken Skewers

Our Honey Lime Chicken Skewers offer a unique twist to traditional grilled chicken. They are marinated in a honey-lime sauce, delivering a delectable balance of sweetness and acidity with a hint of spiciness from Sriracha sauce. Grilled to perfection, they are moist, flavorful, and absolutely irresistible.

Ingredients:

  • 1.13 kg (2 1/2 pounds) boneless skinless chicken thighs, trimmed and cut into 2 inch/5.1cm pieces
  • 2 tablespoons chopped cilantro or parsley for garnish
  • Lime wedges for garnish

For the Honey Lime Chicken Marinade:

  • 3 tablespoons soy sauce (preferably low sodium)
  • 6 tablespoons honey or maple syrup
  • 1 teaspoon lime zest (from one lime)
  • 3 tablespoons fresh lime juice (from 1 1/2 to 2 limes)
  • 4 garlic cloves, minced or grated (or 1/2 tsp garlic powder)
  • 1 1/2 tablespoons grated fresh ginger
  • 1 tablespoon vegetable oil
  • 1 1/2 tablespoons Sriracha sauce (adjust to taste)
  • 1 1/4 teaspoon kosher salt
  • 1/2 teaspoon cornstarch (optional, to thicken to glaze consistency)

Directions: “Grilling Your Honey Lime Chicken Skewers”

Combine marinade ingredients in a bowl or use a food processor.

Marinate chicken in half the marinade for 30 minutes to 12 hours. The remaining marinade can be thickened with cornstarch and used as a glaze.

Prepare your grill to medium-high heat. Skewer the marinated chicken pieces and pat dry. Grill the chicken, turning occasionally and basting with the glaze, until golden brown and cooked through.

Notes:

You can adjust the level of spiciness by varying the amount of Sriracha sauce. Don’t have a grill? These skewers can also be cooked in a grill pan or under a broiler.
