Ingredients
  

  • Extra-virgin olive oil 30 ml
  • Salmon fillets 4 pieces, 170g each
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • Unsalted butter 45g
  • Garlic cloves 3 pieces, minced
  • Cherry tomatoes 225g, halved
  • Baby spinach 60g
  • Heavy cream 120ml
  • Freshly grated Parmesan 60g
  • Mixed herbs like basil and parsley 60g, chopped
  • Lemon wedges optional, for serving

Instructions
 

  • Heat up your skillet with olive oil over medium-high heat.
  • Season your salmon fillets with kosher salt and pepper, then add them to the skillet. Sear each side for about six minutes.
  • Once done, set the salmon aside on a clean plate.
  • In the same skillet, add butter and garlic, then sauté until fragrant.
  • Add cherry tomatoes and cook until they begin to burst. Then add spinach and cook until wilted.
  • Stir in Parmesan cheese, heavy cream, and herbs, and let it simmer.
  • Place the salmon back into the skillet, spoon the sauce on top, and let it simmer for a few minutes.
  • Remove from heat, transfer the salmon to a serving plate, garnish with herbs, and serve with lemon wedges. Enjoy!

Notes

Feel free to substitute heavy cream with a dairy-free option for a lactose-free variant of the recipe. For a spicier kick, add a pinch of red pepper flakes to your Tuscan Butter Salmon.
