Ingredients
  

  • 1 1/2 pounds 680 g ground beef
  • 2 cups 200 g shredded Mexican cheese blend, divided
  • 1/2 cup 40 g panko bread crumbs
  • 2 tablespoons freshly chopped parsley plus more for garnish
  • 2 cloves garlic minced
  • 1 jalapeño finely chopped
  • 1 large egg
  • 1 teaspoon ground cumin
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1/2 large onion chopped
  • 1 15- ounce can 425 g crushed tomatoes
  • 2 tablespoons chopped chipotle chilies in adobo sauce

Instructions
 

  • In a medium bowl, combine ground beef, 1 cup of cheese, bread crumbs, parsley, garlic, jalapeño, egg, cumin, salt, and pepper. Mix until well combined, then shape the mixture into meatballs.
  • Heat olive oil in a large skillet over medium-high heat. Add the meatballs in a single layer and sear for 2 minutes per side until browned. Transfer the meatballs to a plate.
  • In the same skillet, add the chopped onion and cook until soft, stirring occasionally for about 5 minutes. Stir in crushed tomatoes and chipotle chilies in adobo sauce. Bring the mixture to a boil, then reduce the heat to medium-low.
  • Return the meatballs to the skillet, cover, and simmer for about 10 minutes until the meatballs are cooked through.
  • Sprinkle the remaining 1 cup of cheese over the meatballs. Cover the skillet with a lid and let the cheese melt for approximately 2 minutes.
  • Before serving, garnish with freshly chopped parsley for a burst of freshness.

Notes

Feel free to adjust the spiciness by adding more or fewer jalapeños or chipotle chilies.
Serve these Tex-Mex meatballs with rice, tortillas, or as a filling for sandwiches.
To make the dish more colorful, top the meatballs with diced tomatoes or sliced green onions.
