  • Potatoes 680g
  • Olive oil 30ml
  • Salt as per taste
  • Pepper 2.5g
  • Paprika 7.5g
  • Dried Italian herbs 7.5g
  • Green beans trimmed and halved (450g)
  • Olive oil 7.5ml
  • Garlic cloves minced (3)
  • Salt as per taste

Instructions
 

  • Begin by cutting the peeled potatoes into small cubes.
  • In a mixing bowl, combine the cubed potatoes, olive oil, Italian herbs, paprika, salt, and pepper. Mix until the potatoes are well coated.
  • Spread the seasoned potatoes evenly on a baking sheet.
  • Preheat your oven to 400°F (200°C).
  • Bake the potatoes for approximately 15 minutes or until they're tender when poked with a fork.
  • While the potatoes are roasting, prepare the green beans. Combine minced garlic, olive oil, and salt in a bowl. Add the green beans and stir until they are well coated.
  • After the potatoes have baked, remove them from the oven and spread the seasoned green beans over the top.
  • Return the baking sheet to the oven and bake for an additional 25 minutes or until the green beans are done to your liking.
  • Allow the roasted vegetables to cool for a few minutes before serving.
