  • Onion: 1 finely chopped
  • Garlic: 2 cloves minced
  • Carrot: 1 grated
  • Breadcrumbs: 1/2 cup
  • Egg: 1 large
  • Ketchup: 1/4 cup
  • Worcestershire sauce: 2 tablespoons
  • Salt and black pepper: to taste
  • Mashed potatoes: 2 cups prepared
  • Cheddar cheese: 1 cup shredded
  • Parsley: Chopped for garnish

Instructions
 

  • Preheat and Prepare: Heat your oven to 375°F (190°C). Lightly oil a standard muffin tin.
  • Mix the Meatloaf: In a bowl, combine all ingredients except the potatoes and cheese. Mix until well blended.

  • Add the Potato Topping and Cheese: Top each meatloaf with potatoes, sprinkle with cheese, and bake for 5 more minutes.
