Lasagna Roll-Ups recipe. These individual pasta rolls filled with a flavorful meat sauce and creamy ricotta cheese are sure to impress.

Ingredients
  

  • 12 lasagna noodles cooked according to package instructions (340g or 0.75 lb.)
  • 16 oz. ground beef 454g
  • 24 oz. marinara sauce 680g
  • 1/2 cup diced onion 75g
  • 3 garlic cloves minced
  • 1 tsp sea salt or to taste for red sauce
  • 1/2 tsp black pepper or to taste
  • 1/2 tsp dried oregano
  • 15 oz. ricotta cheese 425g
  • 1 large egg
  • 1/4 cup Parmesan cheese shredded (25g)
  • 3 cups mozzarella cheese shredded and divided (340g or 0.75 lb.)
  • 1/4 cup chopped parsley plus more for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cook the lasagna noodles in a large pot of salted water according to package instructions. Drain and rinse with cold water to prevent sticking.
  • In a deep pan or Dutch oven, cook the ground beef over medium-high heat until no longer pink. Add diced onion and cook until softened. Stir in minced garlic, 1 tsp salt, 1/2 tsp pepper, and 1/2 tsp oregano for 1 minute. Add marinara sauce, bring to a simmer, and remove from heat.
  • Spread 1/2 cup of the meat sauce on the bottom of a casserole dish.
  • In a large bowl, combine ricotta cheese, egg, Parmesan cheese, 1 1/2 cups mozzarella cheese, and chopped parsley.
  • Place cooked lasagna noodles in a single layer on a baking sheet. Spread 1/4 cup of the cheese mixture on each noodle, followed by a strip of meat sauce down the center.
  • Roll up the noodles and place them in the casserole dish on top of the meat sauce.
  • Pour the remaining meat sauce over the roll-ups and sprinkle with the remaining 1 1/2 cups mozzarella cheese.
  • Cover the dish with foil, ensuring the foil doesn't touch the cheese. Bake at 375°F (190°C) for 40 minutes.
  • Remove the foil and broil for an additional 2-3 minutes until the cheese is lightly golden.
  • Garnish with parsley and serve the delicious Lasagna Roll-Ups.

Notes

Feel free to customize the filling by adding sautéed vegetables or substituting ground beef with ground turkey or Italian sausage.
Make-ahead tip: Assemble the roll-ups ahead of time and refrigerate until ready to bake. Adjust the baking time accordingly.
These Lasagna Roll-Ups freeze well. Simply wrap them tightly in foil and freeze for up to 3 months. Thaw before reheating in the oven.
