  • 2 chicken breasts halved lengthwise (about 500g or 1lb)
  • Salt and pepper for seasoning
  • 1/2 teaspoon of aromatic garlic powder
  • 1 tablespoon of robust olive oil
  • 1 tablespoon of creamy butter
  • 1 tablespoon of all-purpose flour
  • 3 cloves of fresh garlic minced
  • 1/2 cup of chicken broth or a dry white wine
  • 1 cup of heavy cream
  • 1/2 cup of freshly grated parmesan cheese
  • 1 tablespoon of freshly chopped parsley

Instructions
 

  • Begin by halving the chicken breasts lengthwise, giving you four thin pieces. Season generously on both sides with salt, pepper, and garlic powder.
  • Heat olive oil and butter in a skillet over medium-high heat for a few minutes.
  • Sear the chicken for roughly 5-6 minutes on each side until beautifully browned and thoroughly cooked. Move chicken to a plate and tent loosely with foil to keep warm. Turn off the heat momentarily.
  • Reignite the heat to medium-high, and to the still-hot skillet, add flour and garlic. Allow it to cook for a minute or so, stirring regularly.
  • Pour in the chicken broth, whisking until the flour has dissolved and the broth reduced by half.
  • Add the cream and allow it to bubble gently for a few minutes until it thickens to your liking. If boiling rapidly, lower the heat.
  • Remove the skillet from heat and mix in the parmesan until it blends into the sauce.
  • Return the chicken to the skillet, spooning some sauce over the top. Adjust seasoning as needed and sprinkle with fresh parsley.
