Ingredients
  

  • 4 chicken breasts skinless and boneless (about 675 grams or 1.5 pounds)
  • 1 teaspoon of mixed Italian seasoning
  • 1 teaspoon of garlic powder
  • 1 teaspoon of smoked paprika
  • Sea salt and pepper to taste
  • 12 asparagus stalks ends trimmed
  • 1 oz 28 grams of chopped sun-dried tomatoes
  • 4 slices of mozzarella cheese
  • 1 tablespoon of olive oil

Instructions
 

  • Preheat your oven to 204 degrees Celsius (400 degrees Fahrenheit).
  • Season the chicken breasts with Italian seasoning, garlic powder, smoked paprika, salt, and pepper.
  • Cut each chicken breast lengthwise to form a pocket, ensuring not to cut through completely.
  • Take three asparagus sprigs, some sun-dried tomatoes, and a slice of mozzarella cheese. Roll the cheese around the asparagus and tomatoes and stuff it into the chicken breast. Secure the pocket with a toothpick.
  • Heat olive oil in a cast-iron skillet over medium-high heat. Sear the chicken on each side until golden brown, roughly 3-5 minutes per side.
  • Transfer the skillet to the preheated oven and bake the chicken for 15-20 minutes until thoroughly cooked and no longer pink inside. Enjoy your deliciously stuffed chicken!
