Ingredients
  

  • 396 grams 14 ounces of individually wrapped caramels, unwrapped
  • 42 grams 3 tablespoons of butter
  • 30 ml 2 tablespoons of water
  • 250 grams 2 cups of chopped pecans
  • 450 grams 1 pound of dark chocolate, broken into small pieces

Instructions
 

  • Place caramels, butter, and water into a microwave-safe bowl.
  • Microwave on high, making sure to stir every 30 seconds, until you have a smooth mixture.
  • Stir in the chopped pecans.
  • Using a spoon, drop clusters of the caramel pecan mixture onto a parchment paper-lined tray. Freeze for 15 to 20 minutes.
  • Place the dark chocolate into a microwave-safe bowl and microwave on high, stirring every 15 seconds until melted and smooth.
  • Dip each frozen caramel pecan cluster into the melted chocolate using a fork, ensuring a thorough coating. Place back onto parchment paper and let dry. Chill in the refrigerator until firm.

Notes

This recipe is flexible! You can experiment by adding a sprinkle of sea salt on top of the clusters before the chocolate sets for a deliciously complex salty-sweet flavor.
