Ingredients
  

  • 30 chicken wings approximately 1.36 kg or 3 lbs.
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of garlic powder
  • 1/4 cup of soy sauce
  • 2 tablespoons of Mirin
  • 1/2 cup of honey
  • 3/4 cup of water
  • 1 tablespoon of sesame oil
  • 4 cloves of garlic minced
  • 1 tablespoon of minced ginger
  • 1/4 teaspoon of red pepper flakes optional
  • 1 tablespoon of cornstarch
  • Sesame seeds for garnish

Instructions
 

  • Set your oven to preheat at a temperature of 425 degrees F (220 degrees C).
  • Grab your chicken wings and dry them thoroughly using paper towels. A thorough drying process ensures they'll reach a nice crispy finish in the oven.
  • Blend the rub ingredients together in a large bowl – these include salt, black pepper, smoked paprika, and garlic powder. Toss the chicken wings in this rub until they're fully covered. Brush the wings lightly with olive oil, assisting in achieving a crispy, browned finish.
  • Prepare a baking tray by lining it with foil and a layer of parchment paper on top. This makes for an easier cleanup. Lay out your chicken wings in a single layer on the tray, ensuring they're not overcrowded - use two trays if necessary. Cook the wings in your preheated oven for approximately 35 minutes, flipping them over halfway through to allow for an even cook.
  • While the wings are in the oven, get started on the honey garlic sauce. Mix the sauce ingredients – soy sauce, Mirin, honey, water, sesame oil, minced garlic, minced ginger, and optional red pepper flakes – in a small pan over a medium heat. Let this concoction come to a boil, then reduce the heat and let it simmer. After about 10 minutes, the sauce should have thickened slightly and coat the back of a spoon.
  • Once the wings have completed their initial baking time, remove them from the oven and douse them in your homemade honey garlic sauce. Put them back in the oven for another 10 minutes, remembering to flip them halfway.
  • If you want to achieve a caramelized finish, put your wings under the broiler for a few minutes. Keep a watchful eye on them to avoid burning.
  • Allow your wings to cool for around 10 minutes. The cooling process will see the sauce thicken even more, further coating the wings. Make sure to stir the wings gently every couple of minutes to ensure a good coating.
