Ingredients
  

  • Unsalted butter 2 tbsp/30g
  • 1 tbsp of olive oil
  • A finely chopped onion
  • 2 cloves of garlic minced
  • Chicken thighs 1 lb/500g, boneless, skinless and cut into bite-sized pieces
  • Corn flour/cornstarch 1 ½ tbsp or flour (2.5 tbsp)
  • Low-fat milk 2 cups/500 ml
  • Chicken broth 2 cups/500 ml
  • Long-grain white rice uncooked (1 1/4 cups/225g)
  • 1 tsp dried thyme
  • Salt and pepper as per taste
  • A large head of broccoli 1 lb/400 - 500g, cut into small florets
  • Shredded mozzarella or cheddar 2 cups/200g
  • Optional: parsley for garnish

Instructions
 

  • Start by heating butter and olive oil in a pot.
  • Add onions and garlic and let them infuse their aroma.
  • Next, add in the chicken pieces and cook till they lose their pink color.
  • Stir in the flour and ensure it's well mixed. Pour in the milk gradually, followed by the broth, rice, and seasonings.
  • Once the mix simmers, let it cook covered. After a while, add the broccoli, cover, and cook some more.
  • The final steps include adding cheese, topping it off with more cheese, and broiling it for the perfect crust.
