Ingredients
  

  • Bacon 4 slices, chopped
  • Onion 1/2, diced
  • Celery sticks 2, diced
  • All-purpose flour 1/4 cup
  • Garlic cloves 2, minced
  • Chicken broth or stock 4 cups
  • Heavy cream 1 cup
  • Frozen corn 2 cups
  • Smoked ham 1 pound, chopped
  • Russet potatoes 2 large, peeled and diced
  • Italian seasoning 1 sprinkle
  • Cayenne pepper 1 pinch, optional
  • Salt and pepper to taste

Instructions
 

  • Chop the bacon and cook it in a large pot over medium-high heat until crispy (about 10 minutes).
  • While the bacon cooks, prepare the onion, celery, ham, and potatoes.
  • Remove the crispy bacon from the pot and set aside. Keep the bacon fat in the pot.
  • Sauté the onion and celery in the bacon fat for about 5 minutes.
  • Stir in the flour for about a minute, then add the minced garlic and chicken broth. Stir well to dissolve the flour.
  • Add the cream, corn, ham, potatoes, Italian seasoning, cayenne pepper (if using), and most of the bacon (save some for garnish). Bring the soup to a boil, then reduce to a rapid simmer.
  • Cook the soup until the potatoes are tender, stirring occasionally (about 15-20 minutes).
  • Season with salt and pepper, garnish with the remaining bacon, and serve your delicious Ham and Corn Chowder!

Notes

The soup will thicken the longer it cooks. If you prefer a thinner chowder, add more chicken broth or cream.
Feel free to add other vegetables like bell peppers or carrots for extra nutrition and flavor.
