Ingredients
  

  • Chicken breasts boneless and skinless (approximately 680g/1.5 lb.)
  • Chicken broth 240ml/1 cup
  • Fresh garlic cloves minced (2 pieces)
  • Small onion cut into wedges (2 wedges)
  • Herb-flavored stuffing mix 160g/4 cups
  • Butter 56g/4 tablespoons
  • Cream of chicken soup 1 can
  • Sour cream 454g/1 pint
  • Broccoli florets frozen but thawed (226g/8 ounces)

Instructions
 

  • Begin by combining the chicken broth, minced garlic, and onion in a large pan. Place the chicken breasts on top and bring the mixture to a boil.
  • Once boiling, reduce the heat to medium-low, cover, and simmer for 20 minutes.
  • Remove the chicken, shred it, and set aside. Save the broth for later.
  • Melt the butter and pour over the stuffing mix in a bowl. Mix together.
  • In another bowl, combine sour cream, saved chicken broth, and cream of chicken soup. Use a mixer for a smooth and creamy texture.
  • Layer the stuffing mix at the bottom of a casserole dish. Follow with shredded chicken, then broccoli.
  • Pour the soup mixture over the top and sprinkle with some stuffing mix.
  • Preheat your oven to 350°F (175°C). Bake the casserole for 30 minutes or until golden brown and heated through.

Notes

You can add other vegetables such as carrots or peas for additional nutrition.
Leftovers can be stored in the refrigerator for up to 3 days.
