Ingredients
  

  • Graham Crackers finely crushed (200 g)
  • Unsalted Butter melted (113 g)
  • Salt 2.5 g
  • Lemon Jello 2 packages
  • Boiling water 240 ml
  • Cream Cheese softened at room temperature (680 g)
  • Juice from 1 lemon
  • Zest from 1 lemon
  • Confectioners Sugar 180 g
  • Heavy whipping cream 480 ml

Instructions
 

  • Get your 9x9-inch baking dish ready and give it a non-stick spray coating for later easy removal.
  • In a bowl, combine your crushed graham crackers, melted butter, and a pinch of salt. Ensure everything is mixed well.
  • Form your crust by pressing this mixture firmly into your prepped baking dish. Chill it in the refrigerator while you get started on your filling.
  • Dissolve the lemon Jello in boiling water in a small bowl. Make sure it's fully dissolved, then set it aside to cool.
  • In a separate large bowl, whip up a creamy blend of cream cheese and confectioners sugar.
  • Once your Jello is cooled, add it into the cream cheese mixture along with lemon juice, lemon zest, and whipping cream. Blend until you achieve a smooth and creamy consistency.
  • Pour this filling over your graham cracker crust and smooth the top with a spatula.
  • Chill your cheesecake in the refrigerator for at least 4 hours, or until it sets.
  • Once set, serve your Luscious Lemon Cheesecake and watch it disappear!

Notes

The Luscious Lemon Cheesecake can be garnished with fresh berries or a dollop of whipped cream for an extra touch. If you prefer a less tangy flavor, adjust the lemon juice and zest to taste.
