Ingredients
  

  • 1 stick 113g of softened salted butter
  • 1 cup 200g of granulated sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 2 cups 250g of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 cup 40g of festive sprinkles
  • For the frosting:
  • 2 cups 250g of powdered sugar
  • 1 stick 113g of softened salted butter
  • 3 tablespoons of softened cream cheese
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of milk
  • Additional sprinkles for decorating

Instructions
 

  • Preheat the oven to 350°F (180°C) and line a 9"x 9" baking pan with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the all-purpose flour and baking powder to the mixture, mixing until you have a thick batter.
  • Gently fold in the festive sprinkles, ensuring they are evenly distributed throughout the batter.
  • Spread the batter into the prepared baking pan, using a spatula to smooth the surface.
  • Bake in the preheated oven for approximately 20 minutes, or until the edges are golden brown.
  • Once baked, remove from the oven and allow the cookie bars to cool completely in the pan.
  • While the bars are cooling, prepare the frosting by combining the powdered sugar, softened butter, cream cheese, vanilla extract, and milk in a mixing bowl. Use an electric mixer to blend until smooth and creamy.
  • Generously spread the frosting on top of the cooled cookie bars, using a spatula or knife to create an even layer.
  • Sprinkle additional festive sprinkles on top of the frosting for an extra touch of color and decoration.
  • Cut the bars into squares and serve immediately for a soft and gooey texture, or refrigerate for a firmer feel.

Notes

For variations, you can try using different types of sprinkles to match the occasion or add a hint of flavored extract to the frosting for an extra burst of flavor.
Store any leftovers in an airtight container at room temperature for up to 3 days.
