Ingredients
  

  • 1 egg
  • 1 1/2 tablespoons of vanilla extract
  • 227 grams about 8 ounces of cream cheese, at room temperature
  • One 468-gram approximately 16.5 ounces tube of sugar cookie dough, nearly at room temperature
  • Rainbow sprinkles for decoration

Instructions
 

  • Start by preheating your oven to 350°F (180°C). Apply non-stick spray to an 8x8 (20x20cm) baking dish and set it aside.
  • In a large bowl, combine the egg, vanilla extract, and cream cheese with a hand mixer until well blended.
  • Divide the sugar cookie dough in half. Press one half into the bottom of the prepared baking dish to form an even layer.
  • Pour the cream cheese mixture over the sugar cookie base.
  • With the remaining cookie dough, create flat "chunks" and distribute them evenly over the cheesecake layer. These will sink, melt, and then rise to form the top crust.
  • Bake for 30 minutes or until the sugar cookie crust takes on a golden hue.
  • Allow the dessert to cool for at least an hour. Once completely cooled, scatter rainbow sprinkles on top.

Notes

Make sure the cream cheese is at room temperature for this 5-Ingredient Sugar Cookie Cheesecake Bars recipe. It's easier to blend and makes for a creamier cheesecake layer.
