Ingredients
  

  • 2 cans approximately 708 grams / 1.56 pounds of premium chunk chicken breast, drained thoroughly
  • 1 egg
  • 1 teaspoon of Dijon mustard
  • 1/2 teaspoon of salt
  • 1/4 teaspoon each of garlic powder and onion powder
  • 1/4 teaspoon of black pepper
  • A pinch 1/8 teaspoon of dried thyme
  • 1/4 cup about 30 grams / 0.066 pounds of plain dried bread crumbs
  • More bread crumbs for coating
  • Vegetable oil for frying

Instructions
 

  • First, you'll need to drain the canned chicken thoroughly. Press down on it using a heavy bowl to extract excess liquid.
  • Next, chop the chicken into uniform pieces, about 1/4 inch each. This ensures a consistent texture in your fritters.
  • In a bowl, mix the chicken, egg, Dijon mustard, salt, and spices until well incorporated.
  • Stir in 1/4 cup of bread crumbs.
  • Prepare another shallow bowl with additional bread crumbs.
  • Shape the chicken mixture into six fritters, each resembling a tight hockey puck.
  • Coat each fritter with the extra bread crumbs.
  • Heat 1/4 inch of vegetable oil in a large skillet over medium to medium-high heat.
  • When the oil is hot, pan-fry the chicken fritters on both sides until they're golden brown and crispy.
