  • 1 pound 454 g ground beef
  • 1 medium yellow onion diced
  • 1 green bell pepper diced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 cup 240 g salsa (try a corn and black bean salsa for extra flavor)
  • 1 can 15.25 ounces / 432 g corn, drained
  • 1 package 8 ounces / 227 g cornbread mix

Instructions
 

  • Preheat your oven to 400°F (204°C).
  • In a skillet, cook the ground beef, diced onion, diced bell pepper, ground cumin, and salt until the beef is fully cooked and the onions are translucent.
  • Add the salsa and drained corn to the beef mixture, and cook for an additional 10 minutes, allowing the flavors to meld together.
  • Pour the flavorful mixture into a 9x9 inch (23x23 cm) casserole dish, spreading it evenly.
  • In a separate bowl, prepare the cornbread mix according to the package directions.
  • Carefully spread the cornbread batter on top of the beef mixture in the casserole dish, covering it entirely.
  • Bake the casserole in the preheated oven for 20-25 minutes, or until the cornbread is cooked through and golden on top.
  • Remove from the oven and let it cool for a few minutes before serving.
  • Slice and serve this delicious Tex-Mex Casserole immediately, savoring the delightful combination of flavors.

Notes
