Scotcheroos recipe. These sweet and crunchy bars are a true delight for both kids and adults alike. Made with a perfect combination of peanut butter, Rice Krispies, and a luscious chocolate and butterscotch topping, these treats will satisfy your cravings and leave you wanting more.

Ingredients
  

  • 1 cup 200g granulated sugar
  • 1 1/3 cups 320ml light corn syrup
  • 1 1/3 cups 320g creamy peanut butter
  • 1 teaspoon vanilla extract
  • 6 cups 168g Rice Krispies cereal
  • 1 cup 175g chocolate chips
  • 1 cup 175g butterscotch chips

Instructions
 

  • Grease a 9x13" pan and set it aside.
  • In a large saucepan, combine the sugar and corn syrup over low heat. Stir continuously until the sugar is completely dissolved. Remove from heat immediately if any bubbles form.
  • Stir in the peanut butter and vanilla extract until smooth and well combined.
  • Add the Rice Krispies cereal to the peanut butter mixture, being careful not to crush them. Stir until all the cereal is evenly coated.
  • Pour the mixture into the prepared pan and press it firmly to create an even layer.
  • In a microwave-safe bowl, melt the chocolate and butterscotch chips on high in 20-second intervals, stirring after each interval, until smooth and creamy.
  • Spread the melted chocolate and butterscotch mixture over the Rice Krispie mixture, covering it entirely.
  • Allow the mixture to cool and set completely before cutting it into bars.
  • Serve and enjoy these irresistible Scotcheroos!

Notes

For a twist, you can try adding chopped nuts or sprinkles on top of the melted chocolate and butterscotch layer.
Store the Scotcheroos in an airtight container at room temperature for up to one week.
