Cheesy Stuffed Chicken Breasts

Ingredients
  

  • 3 large chicken breasts
  • Salt and pepper
  • 1 1/2 tsp garlic powder divided
  • 1/4 tsp paprika
  • 1 cup finely chopped broccoli florets
  • 1/2 cup finely diced red bell pepper
  • 1 cup mild cheddar cheese
  • 1 tbsp mayo
  • 2 tbsp olive oil

Instructions
 

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Season both sides of the chicken breasts with salt, pepper, paprika, and 1/2 tsp of garlic powder.
  • Using a sharp knife, make a lengthwise incision in the middle of each chicken breast, creating a pocket for the filling. Be careful not to cut all the way through.
  • In a microwaveable dish, place the broccoli and add about 2 tablespoons of water. Cover with plastic wrap and microwave for 1 minute. Drain any excess water.
  • In the same dish, add the diced red bell pepper, cheddar cheese, mayo, remaining garlic powder, and salt and pepper to taste. Mix until well combined.
  • Divide the filling mixture equally and stuff it into the pockets of the chicken breasts. Use toothpicks to secure if necessary.
  • Heat a large, oven-safe skillet over medium heat and add olive oil. Sear the stuffed chicken breasts for 3 to 4 minutes on each side until golden brown.
  • Cover the skillet with foil and transfer it to the preheated oven. Bake for 15 to 17 minutes or until the chicken reaches an internal temperature of 165 degrees F (74 degrees C).
  • Remove the skillet from the oven and let the stuffed chicken breasts rest, covered, for 5 minutes before serving.
  • Serve the Cheesy Stuffed Chicken Breasts with your favorite sides or a fresh salad. Enjoy the flavorful and cheesy goodness!

Notes

You can add your favorite ingredients to the filling, such as diced onions, spinach, or sun-dried tomatoes, to personalize the flavors.
Make sure to remove the toothpicks before serving.
For a healthier option, you can use reduced-fat cheese and light mayo.
