Ingredients
  

  • 1 tablespoon olive oil
  • 6 boneless skinless chicken thighs or breasts 4 to 6 ounces each, cut into bite-sized pieces
  • 4 bell peppers sliced (vary the colors to make it visually appealing)
  • 1 small onion sliced
  • 1 recipe or package of fajita seasoning mix
  • 1 cup sour cream
  • 4 ounces cream cheese softened
  • 2 cups cheddar cheese grated
  • Optional for serving: avocado guacamole, sour cream, and salsa

Instructions
 

  • In a skillet, heat olive oil over medium heat. Add the chicken and sauté until cooked through. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the sliced onions and bell peppers. Sauté until they are tender and slightly caramelized.
  • Return the cooked chicken to the skillet and stir in the fajita seasoning mix, sour cream, and cream cheese. Mix everything together until well combined.
  • Transfer the mixture to a baking dish and sprinkle the grated cheddar cheese evenly on top.
  • Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
  • Serve the Cheesy Chicken Fajita Bake hot, with optional toppings such as avocado, guacamole, sour cream, and salsa.
