Ingredients

  • One whole pineapple to serve as the bowl
  • 227 grams or 1 cup diced DOLE® Fresh Pineapple
  • 152 grams or 1 cup diced DOLE® Fresh Strawberries
  • 149 grams or 1 cup diced red bell peppers
  • 1 diced jalapeno seeds removed
  • 60 grams or 1/4 cup minced red onion
  • A handful or 1/3 cup chopped cilantro
  • 4 tablespoons lime juice
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt
  • Tortilla chips for serving

Instructions

  • Start by creating your pineapple bowl. Cut about 1/3 of the pineapple off, leaving the stem attached to the larger piece. Set the smaller piece aside for later.
  • Lay the larger section on its side. Cut around the outer edge of the pineapple fruit, and then make cross cuts through the middle. Scoop out the pineapple chunks with a large metal spoon. Save these chunks for your salsa, and pour out any extra juice from your pineapple bowl.
  • Dice enough of the pineapple chunks to fill one cup. Save any leftover chunks for another use.
  • Prepare your strawberries, bell peppers, jalapeno, red onion, and cilantro by dicing or mincing as needed.
  • In a separate bowl, mix together the lime juice, salt, and black pepper.
  • In another bowl, combine the diced pineapple, strawberries, peppers, jalapeno, minced onion, and chopped cilantro. Pour your lime juice mixture over the top, and gently stir to combine.
  • Transfer your completed Strawberry-Pineapple Salsa to the pineapple bowl for a fun and festive presentation.
  • Chill your salsa in the refrigerator for about 30 minutes before serving. This allows the flavors to meld together for the best taste.
  • Serve with your favorite tortilla chips, and enjoy your Incredible Strawberry-Pineapple Salsa!
