Ingredients
  

  • 12 lasagna noodles cooked according to package instructions
  • 16 oz ground beef 85% lean
  • 24 oz marinara sauce
  • 1/2 cup diced onion
  • 3 garlic cloves minced
  • 1 tsp sea salt or to taste for the red sauce
  • 1/2 tsp black pepper or to taste
  • 1/2 tsp dried oregano
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup shredded Parmesan cheese
  • 3 cups shredded mozzarella cheese divided
  • 1/4 cup chopped parsley plus more for garnish

Instructions
 

  • Preheat your oven to 375˚F. Cook the lasagna noodles according to the package instructions, then drain and rinse with cold water to prevent sticking.
  • In a deep pan or Dutch oven, cook the ground beef over medium-high heat until no longer pink. Add the diced onion and cook until softened. Stir in the minced garlic, sea salt, black pepper, and dried oregano, sautéing for another minute. Add the marinara sauce, bring to a simmer, and turn off the heat. Spread 1/2 cup of the meat sauce over the bottom of a casserole dish.
  • In a large bowl, combine the ricotta cheese, egg, shredded Parmesan cheese, 1 1/2 cups of mozzarella cheese, and chopped parsley.
  • To make assembly easier, arrange the cooked lasagna noodles on a baking sheet in a single layer. Spread approximately 1/4 cup of the cheese mixture over each noodle, followed by a heaping tablespoon of the meat sauce in a strip down the center of the noodle. Roll up the noodles and place them in the prepared casserole dish.
  • Pour the remaining meat sauce over the top of the roll-ups and sprinkle with the remaining 1 1/2 cups of mozzarella cheese. Cover the dish with foil, ensuring it doesn't touch the cheese. If needed, secure toothpicks into the rolls to keep the foil away from the cheese.
  • Bake the covered dish at 375˚F for 40 minutes. Remove the foil and broil for an additional 2-3 minutes, or until the cheese is lightly golden. Garnish with parsley before serving.

Notes

Feel free to customize the recipe by adding your favorite herbs or spices to the meat sauce or cheese mixture.
If you prefer a vegetarian option, substitute the ground beef with a plant-based ground meat alternative.
These lasagna roll-ups can be made ahead of time and refrigerated before baking. Simply cover the dish tightly with plastic wrap and store in the refrigerator for up to 24 hours. When ready to bake, remove the plastic wrap and follow the baking instructions.
