Ingredients
  

  • 1 cup old-fashioned oats 96 grams
  • 2/3 cup toasted shredded coconut sweetened or unsweetened (54 grams)
  • 1/2 cup creamy peanut butter 128 grams
  • 1/2 cup ground flaxseed 56 grams
  • 1/2 cup semisweet chocolate chips or vegan chocolate chips 89 grams
  • 1/3 cup honey 113 grams
  • 1 tablespoon chia seeds optional (10 grams)
  • 1 teaspoon vanilla extract 5 grams

Instructions
 

  • Stir everything together: In a large mixing bowl, stir together all the ingredients until thoroughly combined.
  • Chill: Cover the mixing bowl and refrigerate the mixture for 1-2 hours until chilled. This will help the mixture stick together more easily.
  • Roll into balls: Once chilled, roll the mixture into 1-inch balls, using your hands to shape them.
  • Serve: Enjoy the Peanut Butter Oat Balls immediately! They are perfect as a quick snack. Alternatively, you can refrigerate them in a sealed container for up to 1 week or freeze them for up to 3 months.

Notes

For a vegan-friendly version, use vegan chocolate chips and substitute maple syrup for honey.
