Ingredients
  

Chicken and Broccoli:

  • 450 g 1 lb boneless, skinless chicken breast, cut into 3/4" pieces
  • 2 Tbsp cooking oil I prefer extra light olive oil, divided
  • 450 g 1 lb broccoli florets (about 5 cups)
  • 1 small yellow onion sliced into strips
  • 225 g 1/2 lb white button mushrooms, thickly sliced

Stir Fry Sauce:

  • 160 ml 2/3 cup low sodium chicken broth
  • 45 ml 3 Tbsp low sodium soy sauce
  • 2 Tbsp light brown sugar or honey
  • 1 Tbsp corn starch
  • 1 Tbsp sesame oil
  • 1 tsp fresh ginger grated
  • 1 tsp garlic 2 small cloves, grated
  • 1/4 tsp black pepper

Instructions
 

  • Whisk together all the sauce ingredients in a bowl. The warm broth will help dissolve the sugar faster. Set aside.
  • Season the chicken lightly with pepper and fry it in a heated skillet with some oil. Once golden brown and cooked through, remove and keep warm.
  • In the same skillet, stir fry the broccoli, onion, and mushrooms with some oil until softened.
  • Pour the sauce over the vegetables, simmer until thickened. If needed, add a bit of water to thin the sauce.
  • Add the chicken back into the pan, stir until heated through. Taste and add more soy sauce if needed. Serve this delightful dish over hot rice.

Notes

Feel free to substitute the chicken with tofu for a vegetarian version, or swap broccoli for other vegetables like bell peppers or snow peas. Serve it with brown rice for a fiber boost.
