Ingredients
  

  • 340 grams 12 oz. bow tie pasta
  • 30 ml 2 tablespoons olive oil
  • 454 grams 1 pound mild Italian sausage, casings removed
  • 2.5 ml 1/2 teaspoon red pepper flakes (optional)
  • 120 ml 1/2 cup diced onion
  • 4 cloves garlic minced
  • 1 can 794 grams or 28 oz. Italian-style plum tomatoes, drained and coarsely chopped
  • 355 ml 1-1/2 cups heavy cream
  • 250 ml 1 cup packed spinach leaves, cut into thin strips
  • Fresh parsley minced (optional)

Instructions
 

  • Get a large pot of water boiling and cook your pasta as per the instructions on the package. Once done, drain and set aside.
  • While your pasta cooks, grab a large skillet and heat the olive oil. Toss in the sausage and red pepper flakes, then cook over medium-high heat until the sausage is nicely browned and cooked through.
  • Add in your onions and garlic, cooking until the onions are tender.
  • Next, toss in the tomatoes and heavy cream. Let this simmer until your mixture starts to thicken. This should take about 10 minutes.
  • Add the spinach and let it cook for an additional 3 minutes.
  • Finally, add the cooked pasta to your sauce and toss until well combined. Sprinkle with parsley, if you like, and serve.

Notes

This Pasta Creamy Sausage recipe is quite flexible. If you don't have Italian sausage on hand, you can use any other type of sausage you prefer. If you're not a fan of spicy food, feel free to omit the red pepper flakes. If you're a cheese lover, sprinkle some parmesan on top for an extra layer of flavor. This dish pairs wonderfully with a simple side salad or some garlic bread.
