Ingredients
  

  • About 350g 12-16 ounces of fresh asparagus, ends trimmed
  • 15 ml 1 tablespoon extra virgin olive oil
  • Kosher salt to taste
  • Pepper to taste
  • 2 sheets of frozen puff pastry thawed
  • 225 g 8 ounces Gruyère cheese, shredded
  • 12 slices prosciutto
  • 1 egg beaten

Instructions
 

  • Preheat your oven to 220°C (425°F) and line a sheet pan with parchment paper.
  • Roll out the puff pastry on a lightly floured surface to form a large rectangle, about twice the original size. Trim the edges and cut into six squares.
  • Toss the asparagus in olive oil, and season with salt and pepper.
  • Place a slice of prosciutto on each pastry square, fold it to fit nicely. Add 3-4 asparagus stalks and 1-2 tablespoons of cheese.
  • Lift two opposite corners of each puff pastry square, wrap them around the asparagus, and press to seal. Brush the pastry with the beaten egg. Add more salt and pepper, if desired.
  • Bake until the puff pastry is golden and puffed, about 12-15 minutes. Serve immediately.

Notes

These Prosciutto-Wrapped Asparagus Puff Pastry Bundles can be prepared ahead of time and refrigerated until you're ready to bake them. You can substitute Gruyère with any other melting cheese of your choice.
